Lemon Curd

Home-made Lemon Curd


Serving size: Serves 10 or more

INGREDIENTS

5 eggs
3/4 cup caster sugar
grated rind of 1 lemon
2/3 cup lemon juice
125g chilled butter, cut into small cubes

METHOD

Beat eggs and sugar until pale and doubled in volume. Stir in lemon rind and juice.

Place bowl over a pan of simmering water. Add butter piece by piece, whisking constantly until thick. Serve cold.
